HOW TO MAKE BEST CHICKEN BIRYANI

Preparation:
Wash two cups of Basmati Rice and keep soaked in cold water for ½ hour. After ½ hour drain and keep aside.

Chicken Marinade:
Chicken Thighs – 8 pieces
Yogurt – 3 tbsp
Turmeric – ½ tsp
Red Chilly Powder – ½ tsp
Salt – ½ tsp
Chopped Mint Leaves – 2 tbsp

Mix all these ingredients together and marinate chicken and set aside to rest for ½ hour.

Ingredients for chicken:

Oil – 2 tbsp
Ghee (Clarified Butter) – 2 tbsp
Jeera (Cumin) – 1 tsp
Spices – 2 Cinnamon, 2 Cloves, 2 Cardamoms
2 Onion Sliced
4 Green Chillies
Ginger (Crushed) – 2 tbsp
Garlic (Crushed) – 2 tbsp
Mint – 1 bunch
Cilantro – 1 bunch

Turmeric Powder – ½ tsp
Red Chilly Powder – 2 tsp
Coriander Powder – 1 tsp
Pepper Powder – ½ tsp
Garam Masala – ½ tsp

Method to make Chicken:

In a pressure cooker, add 2 tbsp Oil and 2 tbsp Ghee, when the oil is hot Add 1 tsp of Jeera and rest of the spices. Add Onions and Green Chillies and sauté well. Add crushed Ginger and crushed Garlic and mix well, then add chopped Mint Leaves and Cilantro and sauté well. Save 3 tbsp of the sautéed onion mix for later to use with rice.

Add ½ tsp Turmeric powder, 2 tsp Red Chilly Powder, 1 tsp Coriander Powder, ½ tsp Pepper Powder, ½ tsp Garam Masala and mix well. Add the marinated Chicken and salt and mix well. Pressure cook until the chicken is well cooked and the sauce is thickened.

Ingredients for cooking Basmati Rice:

Basmati Rice – 2 cups
Hot Water – 4 cups
Oil – 2 tbsp
Ghee – 2 tbsp + 1 tbsp
Cinnamon – 4 small pieces
Cardamom – 2
Jeera (Cumin) – 1 tsp
Bay Leaves – 3
Onion mix – 3 tbsp (Saved when cooking for chicken)
Turmeric Powder – ½ tsp
Mint & Coriander leaves (Chopped)
Salt to taste

Method to make Basmati Rice:

In a frying pan, add 2 tbsp of Oil and 2 tbsp of Ghee when hot add the cinnamon, cardamoms, 1 tsp of Jeera (Cumin) and 3 Bay Leaves. Also add the saved onion mix and fry well. Add ½ tsp of Turmeric powder, chopped Mint, Cilantro and mix well. Now add the Basmati Rice and fry well until a nice aroma arises. Add 4 cups of hot water and 2 tbsp of Salt and stir well. Close the lid and let the Basmati rice cook well. Once the rice is cooked, add 1 tbsp of Ghee (if needed).

Garnish for Biryani

Raisins
Cashew Nuts
Onion 1 (Finely sliced)
Fry the raisins and cashew nuts in Ghee until golden brown, also caramelize onions.
Layer the Chicken Biryani and Garnish as shown in the video.

Voila! Your Chicken Biryani is ready. Serve hot. Enjoy!!!
